Vesper, from the sixth canonical hour celebrated each late-afternoon in song to reflect its richness and the worshipful sense it imparts.

Tasting Notes:

This Grande Champagne, older than the Pale & Dry X.O, has been crafted in a different, more classic style, with a more pronounced amber colour, with bright flashes of pure gold.

 

The initial oaky bouquet gives way to aromas of mushrooms, dry vine shoots and vanilla. On the palate, the extraordinary full-bodied roundness is matched by the remarkable length.

 

This is a very full, very mature, notably refined cognac.

 

Ageing:

Each cognac is aged separately, for longer than the Pale and Dry, owing to their origin and then the blend itself, made  at the end of the ageing period, is aged for 2 years or more (marriage).

Background Information:

The Delamain family have been handcrafting their exceptional Cognac since 1824 and remain one of the last family owned houses. They benefit from universal recognition as the leading specialist in the blending and elevage of fine old Cognac using only eau-de-vie from La Grande Champagne – the first great growth of Cognac. This is then aged in seasoned oak casks for a minimum of two decades, before being blended and bottled under the control and expertise of the direct descendants of the founder James Delamain.

 

This skill and knowledge passed down through the generations was honoured by the International Spirits Challenge in 2007 who awarded Charles Braastad-Delamain the Trophy of Excellence in Craftsmanship, perhaps the highest accolade in the Spirits world.
